Potato Ham Skillet Recipe



Here's a quick and easy dish that's easy on the pocket book and unbelievably yummy!

Potato Ham Skillet

4 cups cubed, cooked potatoes
2 cups, diced, cooked ham
1/2 cup mayo
1/2 tea salt
1/8 tea pepper
2 cups shredded mozzarella cheese

In a large skillet, combine potatoes, ham, mayo, salt, and pepper. Cook and stir over medium-low heat until heated through. Stir in cheese until melted. Try to keep yourself from eating it all before calling the family to dinner!

Stumpf Notes: I roughly doubled this recipe. I cooked about 10 potatoes. For the ham, I used 2/3 of a 1 lb. package of diced ham cubes. I didn't use as much cheese as called for and it was plenty cheesy.
