Meal Plan Monday - March 23, 2009


We had an weekend action-packed weekend from start to finish! On Saturday evening, we hosted some of the production team members from Extreme Makeover: Home Edition. Bryan figured that they travel so much so that they rarely get a home-cooked meal. It was quite a blessing to utilize my full pantry to whip dinner up.


This afternoon and evening, with much help from my daughter and her friends, we made around 90 cups of granola. Glad that task is done for another month or two!


Here is what the Stumpf Family will be enjoying this week:

Monday (Bryan Night Meeting) - Taco Soup, Tortillas

Tuesday (Horse Judging/4-H) - Deanna's Meatloaf (crockpot), Mashed Potatoes

Wednesday (AWANA) - Lunch Meat Sandwiches, Chips

Thursday (Bryan Night Meeting/4-H??) - Ground Beef Stew (crockpot), Fresh Bread

Friday (Bible Study) - Pizza

Saturday (E.M.H.E. Knocks on the Door!!) - Black Beans, Cheese & Chips

  1. How neat that you hosted the EMHE team! Your menu for the week looks good! Would you share you crock pot meat loaf recipe? Not sure I could make enough to feed my family in my crock pot! I make a LONG meat loaf on a jelly roll pan. I think I typically use 4 pounds of ground beef -- and rarely have leftovers!!! :o

  3. My dear friend Deanna made this meatloaf for our Bible Study a few years back. It was the best I'd ever had! We never have any left over. I'm thinking we'll eventually buy a big roaster to cook in since on many meals we're ourgrowing our crockpot.

    Deanna's Meatloaf
    2 lbs. ground beef
    1/2 C oatmeal
    1/2 C milk
    2 eggs
    1 1/2 tea. salt
    1 tea. pepper (this is what makes it!)

    Combine and shape into loaf. (I put the oats, milk, and eggs through the food processor or blender to chop the oats fine.)

    Sauce:
    2/3 C Catsup
    1/2 C Brown Sugar
    1 tea. mustard

    Pour over the loaf and bake for an hour in the oven at 375 or on low in the crockpot for 6-8 hours.

  4. Thanks for posting the recipe! I do have a big roaster that I could use -- but it is awkward to get out from its storage place and more awkward to wash and put away again. Maybe I need TWO crockpots!!!! :)
