I also cook chicken and freeze it, but not chopped. I boil 5-10 breasts at a time in a large pot, then shred it and freeze it in gallon sized ziplocks. I just take out what I need when I need it- whether it be one serving for me for a quick chicken wrap, or a larger amount for a casserole. It's easy to break up- just toss the bag against the counter (like you would a bag of ice) and then reach in and get what you need!
